Tried this for supper tonight and it turned out really good for as easy as it was. I used chicken breast though as that was what I had on hand and I also followed the other review and added a 1/2 teaspoon of thyme for more flavor. Roasted some mini peppers to have with it and it was the perfect meal for a weeknight. It’s just my husband and I and I had enough left over to take in my lunch tomorrow at work. Will definitely make this again. Thanks much for the recipe!
