I absolutely love this recipe, I’ve made it a bunch of times and it’s always been good. I do a few things differently (mostly adding the spices when I melt the butter, plus adding a few extra spices and more than the recipe calls for), and I’ll add spinach and mushrooms (cook the mushrooms with the onions, spinach at the end) for anyone looking to add veggies.
Serving it with coconut rice is amazing, this is just an awesome recipe and it’s something I break out my instapot for specifically. It was a part of my meal cycle throughout uni too, and really great for leftovers.

I had to substitute crushed tomatoes for tomato sauce, coconut milk for cream and granulated onion for fresh onion. And I finally got to use the garam masala I bought. I threw in some leftover Yukon gold potatoes and crimini mushrooms. Yum! Will definitely make it again.
